The carbohydrates in pasta softened by cooking breaks down rapidly during the digestive process, causing an increase in blood sugar levels.
I try to eat healthy most times... but the Nigerian in me, will never allow me to be great.
So, when I do eat healthy, this recipe is one of my favorites.
Recipe: Pasta with creamy avocado sauce.
Time: 25mins
Yield: 4
Ingredients
1 medium Avocado
1 garlic clove
2 tbsp extra-virgin olive oil (Anointing oil in Nigeria)
2 tbsp of Lemon juice
Pasta (made from semolina)
Pinch of salt & pepper
1/4 tsp of red pepper flakes
2 tbsp of shaved Parmesan cheese
Directions

Bring a pan of salted water to a boil. Cook pasta (Penne) according to package instructions, until al dente.

Combine avocado, garlic, olive oil, lemon juice, salt, and pepper in a blender or food processor. Blend until smooth.

When the pasta is ready, turn off the heat, drain in a sieve, put back in the pan. Cover with the avocado sauce.

Sprinkle red pepper flakes and mix well.

Serve in a dish, with the shaved Parmesan on top.
First thing you want to know about Avocados, is that they are packed with loads of nutrients which are beneficial to our health. Avocado is a weight-loss friendly food because it is high in fiber, low in carbs, and does not raise blood sugar levels.

Always cook pasta for a lesser time and eat your pasta al dente (slightly firm).
Pasta made from semolina, farina and refined durum wheat flour are digested more quickly than pasta made from whole-grain durum wheat.
