The Ghanaian groundnut soup has peanuts or groundnuts, as Ghanaians fondly call it, as its base. This soupy delight is loved by all, not only for its incredible nutty flavor but it’s also full of nutritional goodness.

Groundnuts contain healthy fats that good for aiding weight loss. Which could be attributed to its ability to lower bad cholesterol and increase good cholesterol in the body. Let’s not forget all the amino acids, poly-phenolic anti-oxidants, vitamin E, B complex, pantothenic acid, copper and magnesium among others present in groundnuts.

Apart from adding great flavor and delicious chewy tender meat to our dishes, beef is also a good source of protein and iron. It is also rich in vitamin B12, phosphorus and selenium.

INGREDIENTS

  • 200g groundnut paste / peanut butter
  • 2 pounds of beef
  • 2 tbsp. ginger paste
  • 2 tbsp. garlic paste
  • 1 tsp dried thyme
  • 1 cup beef stock
  • 2 medium onions
  • 3 large tomatoes
  • Red chili pepper
  • 2 tbsp. tomato paste
  • salt

INSTRUCTIONS

  • Mix the groundnut paste with about 1 ½ to 2 cups of water. Using your hand, mash until there are no lumps and it’s a smooth consistency.
  • Place over medium heat and stir. Keep stirring until it begins to thicken. Turn down the heat and simmer until oil form on top. Stir occasionally
  • Whilst waiting for our groundnut to get ready, let’s begin with the soup base. Wash the beef into a medium sized pot. Add thyme, ginger, garlic and ½ cup of beef stock. Stir and cover. Steam the meat for about 5- 10mins.
  • Add your whole onions, pepper and tomatoes to the pot. Mash the tomato paste in the remaining beef stock and add to the beef.
  • Scoop your thickened groundnut paste onto the beef. Add about 2 cups of water. Stir until groundnut is properly dissolved. Cover and bring to a boil for about 15-20mins.
  • Uncover it half way when it begins to boil over. Remove and blend the onions, tomatoes and pepper. Add them back to the pot. Add salt. Cover and simmer for about 5-10mins.
  • Your groundnut soup is ready!
