Vegetable chicken gravy is healthy and an easy substitute for stew and can be eaten with almost anything.
Vegetable chicken gravy is a very quick sauce to prepare and can be used as a replacement for Nigerian stew.
Vegetable chicken gravy is a chicken and vegetable infused sauce made Nigerian-cuisine style. It is gotten from boiling and sautéing. It can be served as a side for a main dish like rice.

Ingredients
6 pieces of Chicken
Fresh veggies chopped i.e. Carrots, Green beans, Red and Green Pepper
Spring Onions Sliced
1 Chopped Onion
3 irish potatoes or 2.5 Tablespoons Corn flour/ Corn Starch or Plain Flour (Semovita can be used instead too)
3 Cloves Garlic Minced
1 Tablespoon Minced Ginger
3 Knorr Chicken Cubes
1 Tablespoon Curry Powder
Salt to taste
1 Tablespoon thyme
Chicken seasoning (optional)

Instructions
1. Wash the pieces of chicken and then place in a clean pot. Season the chicken with salt, a chicken cube, thyme, curry, some garlic, ginger and chicken spices. Massage into the chicken and allow to marinate for some time (45 minutes to 1 hour).
2. After marination, pour some water in the pot to cover the chicken and pour half of the sliced onions in it. Put another cube of chicken seasoning, curry powder and some salt to taste.
3. Place the pot on moderate heat and allow to boil.
4. While the chicken is boiling, heat a frying pan on medium heat and pour about a cooking spoon of oil.
5. Add the garlic and onions, and sauté till you get a fragrant smell. Add the marinated vegetables, sauté for 3-4 minutes and set aside.
6. Mix the Cornflour/Corn starch or Plain Flour (or Semovita) with half a cup of water and stir till smooth. A healthier option is to boil the tomatoes, mash them and use as a thickener instead.
7. When chicken is done, remove from stock and leave the pot on low heat.
8. Add the sautéed veggies into the stock and mix. Check for taste, if inadeuqate, add some salt and seasoning cubes.
9. For the gravy to thicken, add the mixed cornstarch or flour into the sauce till you get the thickness you want.
10. Stir well and then add the chicken into the gravy. Allow to cook for 2-3 minutes and then turn of heat.
Your gravy is ready! It can be served as a side for rice, boiled potatoes or boiled yam.
