The fastest way to cook spaghetti squash is to cook it in a microwave. Which makes it less flavorful, unlike cooking it in an oven which obviously takes longer.

Microwave back takes about 12mins compared to 45mins when baked in an oven.

Spaghetti squash best alternative to enjoy your pastime favorite spaghetti whilst on a low carb diet. Squash boosts your immune system and is full of organic vitamins. Largely recommended for diabetic patients, it contains pectin which controls blood sugar levels.

But be careful, wild squash is poisonous to humans. Stick to store –bought or farm cultivated squash.

 

INGREDIENTS

  • I medium sized squash
  • 1 pound beef filet
  • 3 tbsp. Miss Cookie Meat Mix (or onion, ginger, garlic blend mix)
  • 1 large green bell pepper (thinly sliced)
  • 1 large red bell pepper (thinly sliced)
  • 3 large cloves of garlic (finely minced)
  • 2 tbsp. dark soy sauce
  • 2 large carrots ( diced into chunks)
  • 1 large onion (diced into chunks)
  • 2 tbsp. of chili flakes
  • Water
  • 6 tbsp. olive oil

INSTRUCTIONS

  • Properly clean the meat and pat it dry. Slice into thin strips of about 2cm. Marinade with Miss Cookie Meat Mix and place in the fridge.
  • Thoroughly wash your squash. Cut off the stump at one end so that it can stand evenly. Using a sharp knife (the skin is quite tough) slice it into a half, lengthwise. Scoop out the seeds and innards.
  • Place it in a microwave-safe bowl with the insides facing down. Pour in about 1 inch of water into the bowl.
  • Microwave on high for about 12mins, or until you can easily pierce the skin with a fork.
  • Remove from the bowl and place into a tray with the insides exposed. Drizzle 2 tbsp. of olive oil (1 on each half). Allow cooling for about 10mins. Use a fork to remove the spaghetti-like strands of the fruit into a bowl.

 

  • Add 3 tbsp. of oil into a wok on medium heat. Add your meat to hot oil, cook until brown whilst stirring. Remove from the work into a bowl
  • Add 1 tbsp. of oil, pour in your vegetables (onions, carrots, red and green bell peppers). Cook until tender. Add your meat, soy sauce, and spaghetti squash. Allow to cook for about 5mins, whilst stirring intermediately.
  • Add the pepper flakes and salt to your preference. Simmer for 2mins. Your yummy stir-fry spaghetti squash is ready!
