Pulse Blogger: Breakfast ideas 101

Raise your hands if Breakfast is also your favorite meal of the day! Then wave those hands if you can eat breakfast meals at anytime of the day!

I am one of those people that would be at a restaurant for dinner and ask the waiter if I can order from the breakfast section of the menu.

Thought it would be a good idea to share with you some of my easy but scrumptious breakfast ideas….

Pancakes!

My absolute favorite. I make them in different shapes, sizes and flavors each time. For now, I’m loving the silver dollars (tiny sized ones).

They are so cute and the best part is they fit into your mouth perfectly, no need for bites or fork & knife struggle.

For flavor, I use cocoa powder to make chocolate pancakes, mashed ripe bananas for banana pancakes and  mashed over ripe plantains for plantain pancakes.

Then I go crazy with toppings and sauces from nutella to nuts to maple syrup, fresh fruits…..whatever rocks your boats.

 

Pancakes can be served alongside sausages, ham, bacon, baked beans, the list goes on and on.

Plantains and Eggs!

Whether it’s fried plantains or boiled plantains, once served with eggs….the combo can be extremely delicious.

I usually pair my boiled ripe plantains with saucy eggs packed with either sausages, beef or chicken and vegetables. Then for my fried ripe plantains, I like plain omelettes….maybe served with steamed veggies.

 

I also do something I call GizTostones some mornings.

They are usually for mornings when I am in the mood for a bite rather than the empty stomach mornings.

It is simply stir fried gizzard chunks with veggies spooned over fried unripe plantains (I just cut the plantains into large chunks, make them flat using a saucer and I deep fry).

Suya Sandwich!

This has to be the easiest of them all.

The trick is to have suya a day before and leave some leftovers.

Just toast slices of bread, layer with lettuce, onions, cabbage and leftover suya (heated up) then top with toasted bread as lid.

Guac Toast!

So Guac is short for Guacamole, a mix of mashed avocado, tomatoes, salt & pepper.

Now imagine this mashup spread over fresh bread toast and topped with a sunny side up eggy goodness…..yum!
